Work has started on renovating the former Gelato Mio and Giraffe restaurants on the Chiswick High Road which will become the latest in the chain of Bill's, a restaurant and produce shop.

Bill's is the brainchild of Bill Collinson, who grew up in Lewes and started by running a greengrocer shop. When a flood in October 2000 destroyed the store he decided to change direction and opened Bill's as a cafe/restaurant.

The originality of his food attracted critical attention and in 2006, he won the Observer Food Monthly Best Newcomer award. A branch of Bill's opened in Brighton in 2005.

The chain, which has been expanding lately, already has six branches in central London, as well as Richmond, Wimbledon, and one soon to open in Kensington. There are thirteen restaurants throughout the UK including Cambridge, Reading and Bristol. Bill's also sells a range of products including jams, chutneys, biscuits and chocolate as well as gift hampers and a cookery book.
