Leiths School of Food and Wine is delighted to announce a new series of one day cookery classes with renowned guest chefs.

Highlights include a class with leading fusion chef Peter Gordon of the award winning Providores including exciting flavour combinations such as Deep-fried egg with lime chilli dressing, garam masala and crispy shallots; and Steamed crab, shiitake, corn & coconut custard pots with wasabi tobikko; this class promises to be a sensory sensation. Leith is also delighted to welcome the ‘New Face of Indian Cookery’ TV chef Anjum Anand who unravelling the secrets of Indian cuisine.

Furthermore, Leiths is delighted to announce that a number of successful former Diploma Alumni are returning to host their own classes as guest chefs.

These graduates have carved out hugely successful careers in their specialist area and include: Mexican Cookery with Angeles Alaya, author of ‘Fresh Mexican’; Scandinavian cookery with Signe Johansen, the author the Scandilicious blog and soon-to-be-released cookery book ‘Secrets of Scandinavian Cooking’; Indian Cookery with Angela Malik, specialist in Asian cuisine; French Cookery with Henry Harris; Chef Patron of RACINE; and ‘One Pot Cooking’ with Alan Rosenthal founder of ‘Stewed!’ a company selling deliciously different stew pots through supermarkets.

Camilla Schneideman, Managing Director of Leiths (and a former student herself) adds “we are thrilled to have so many successful students return to Leiths. It is a testament to their training and dedication to food that they have climbed the often tricky food ladder to reach the top.”
The classes will be led by the guest chefs and supported by Leiths highly qualified teachers. Largely hands on, students will have plenty of opportunity to practice alnog side the experts before sitting down to enjoy lunch with a well earned glass of wine.

One Pot Cooking 17 Feb 2011: 10.00 – 2.30, £125
We are delighted to welcome Leiths trained Alan Rosenthal to lead this inspirational One Pot Cooking course. Since graduating, Alan has set up the very successful stewed! company, devising, making and selling stews in a convenience form. Alan will be sharing his culinary secrets and delicious recipes with us on this hearty and full flavoured hands-on course.

Cooking with Peter Gordon 15th Mar 2011: 9.45- 4.00 £250
We are thrilled to have Peter Gordon with us for this class. Peter will be demonstrating recipes from his restaurants, award winning The Providores and Kopapa – which opened in December. Peter cooks a style he terms Fusion – and in this class he’ll show you the tricks to combining flavours from around the world effortlessly and with creativity. Menu includes; Deep-fried egg with lime chilli dressing, garam masala and crispy shallots, Steamed crab, shiitake, corn & coconut custard pots with wasabi tobikko, Baked rhubarb with sashimi & a beer battered oyster, Miso risotto with chicken livers & plum compote.

Mexican Cooking - Summer Lunch 24th March 2011; 10-2.30 £125
Join Leiths trained Angeles Alaya for a culinary journey to Mexico. Specialising in modern Mexican cuisine, Angeles Alaya is a culinary consultant and teacher, and author of Fresh Mexican. In this hands-on class Angeles will explain the components of Mexican cuisine and demonstrate some of the dishes before the cooking commences. Menu includes Margarita tequila cocktail, Scallops and mango tostadas, Chilled avocado soup, Halibut fillet with “cascabel” chilli sauce and Corn cake

Indian Cooking - Easy Indian at Home17th May 2011; 10.00 – 2.30 £125
We are delighted to welcome former Leiths Cookery Diploma student Angela Malik back to the school to share the secrets of cooking authentic Indian food. Since graduating, Angela has established herself as a successful teacher, specializing in Asian cuisine. Dishes covered include: Perfect Masala Base Punjabi Chicken Curry, Chilli Panneer, Tarka Dhal and Fragrant basmati rice

Scandinavian Cooking 19th May 2011; 10.00-2.30 £125
Unravel the secrets of Scandinavian cooking in this hands-on class with Leiths trained Signe Johansen. Signe will introduce you to the Scandinavian flavours of her childhood, including enticing dishes such as roast asparagus and Vasterbotten cheese; Bergen fish chowder with spelt and oatmeal bread; gravlax; and fruits of the forest and star anise sorbet. Many of the recipes are a sneak preview of Signe’s book ‘Secrets of Scandinavian Cooking’ which will be published in May 2011.

I Love Curry with Anjum Anand 27th Sep 2011; 9.45-4.00 £250
We are delighted to welcome Anjum Anand to Leiths for this hands-on workshop. Describing herself as ‘the new face of Indian Cookery’, Anjum is a successful television chef and cookery author who specialises in creating Indian food that suits the way that we eat today. In this illuminating class, Anjum will demonstrate the basics such as how to select, use and store your spices, and how to achieve perfect basmati rice.You will then join in the cooking, preparing dishes selected from her new book ‘I ♥ Curry’ such as lamb kebabs with radish chutney; tomato, cucumber and red onion raita; and sweet saffron and cardamom yoghurt.

Cooking with Henry Harris 20 October 2011: 9.45-4.00, £250
We are delighted to welcome guest Chef/Patron Henry Harris of RACINE, Knightsbridge as he joins us here for a day of some of his favourite classic French fare during this class Henry will concentrate on all the delicious classic French dishes you can make using duck from cassoulet to confit. This workshop will be hands-on with Henry demonstrating the dishes during the cookery session. Sit down and eat what you have cooked with a glass of wine. Not to be missed
