Gus Evans, owner of well known Fulham gastropub the Butcher’s Hook, is opening his second site at the location of the old Thatched House on Dalling Road in Hammersmith. 

The Butcher’s Hook Ravenscourt Park will open on August 11.

Head chef John Stanyer, who has previously worked at restaurants including Daphne’s, Launceston Place and the Albion, will be responsible for cooking a range of British dishes using seasonal produce.

Dishes are expected to include: braised chicory, poached pear, walnut & stilton salad, balsamic dressing; roasted fillet of hake, wholegrain mustard mash samphire, mussels, white wine sauce; and bakewell tart, crème anglaise.

There will also be an all-day "blackboard" menu, serving up smaller plates such as Welsh rarebit, potted shrimp and Croque Monsieur, as well as dedicated kids’ menus and weekend brunches. 

Gus says he plans to make some significant changes to the look and feel of the pub before it opens in August, including relaxing the style and overhauling the pass area to open it out more. 
Originally from New Zealand, Evans's early career included stints running Deals in Chelsea Harbour and the Big Easy on the King's Road in the early 1990s, before becoming operations director at Adam and Kate Robinson's group of restaurants - the Bollo gastropub in Acton, the Chiswick restaurant and the Salt House in St John's Wood.

In 2003 he was appointed restaurant development manager at the Hoxton Apprentice, the government-sponsored training restaurant, and in 2005 he went on to set up The Butcher's Hook. His wife Laura now works alongside him, and is playing a key role in the transformation of the new site in Ravenscourt Park. 

The Butcher’s Hook has been recognised with both local and national awards over the years, including the Publican’s Wine Pub of the Year, Best Wine & Food Matching and Best Healthy Eating Pub, as well as Hammersmith & Fulham Chef of the Year.
